“Storms make trees take deeper roots.” ~ Dolly Parton

… I guess all our roots are getting quite strong this year! Speaking of Dolly Parton … have you already watched the documentary about this powerful, talented & iconic singer, songwriter, actress, business woman & humanitarian, called “Dolly Parton: Here I am? If not, you absolutely should!

Anyhow, we’ve survived the storm this fall with lots of beets from the garden & SAKU Ruby Cocoa cookies full of nuts, chocolate & spice. They are also gluten & dairy free & they go down well with lockdown movies & SAKU lattes … Enjoy!

INGREDIENTS:

• 100 g dark chocolate
• 100 g ground almonds
• 100 g ground walnuts
• 50 g rice flour (but any other flour will do 🙂
• 100 g coconut sugar
• 80 g powdered white sugar
• 2 Tbsp Ruby Cocoa
• 1 Tbsp baking rum
• 2 egg whites

HOW TO MAKE:

• Grate the chocolate, almonds & walnuts to a fine consistency.
• Mix together above ingredients and add all other dry ingredients: rice flour, coconut sugar, powdered sugar & Ruby Cocoa.
• Beat the egg whites till creamy (not stiff) and add the rum.
• Finally, mix the wet & dry ingredients together – the dough should be tight, but moldable – if it is too wet and sticks to the counter, just add a little more rice flour or ground nuts.
• Form two rolls (4 cm in diameter), wrap in foil & cool for 2 hours in the fridge.
• Pre-heat your oven & cut 1 cm thick slices off your rolls.
• Put them on a cookie sheet & decorate each with an almond or walnut half.
• Bake at 375 Fahrenheit for about 8 – 10 min.
