Chia seeds were an important food and medicinal plant for Mayan and Aztec Cultures. The seeds were ground to make a poultice for infections and even placed whole in eyes to clear inflammation. They were also prized for their nutritious qualities, which science has now validated: chia seeds are full of important nutrients and are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium.  ; ) … Enjoy!

INGREDIENTS:

  • 1 tsp Golden Orange
  • 1 Cup Coconut Milk
  • ¼ Cup Chia Seeds
  • 1 Tbsp Coconut Flakes
  • Zest & Juice of 1 Orange
  • 1 Tbsp Maple Syrup (or more if you wish)
  • Dash of Cardamom

HOW TO MAKE:

  • Combine Golden Orange, chia seeds, coconut flakes & cardamom
  • Mix coconut milk, orange juice and zest & maple syrup
  • Slowly whisk the milky mixture into the dry ingredients
  • Cool for at least 3 hours to let the chia seeds do their magic … stir or shake occasionally for a smooth pudding
